Touch Down: Super Bites & Top 5 Picks!
Hey there, ArtBLT’ers! Did you have a great weekend? The sis and I hope that your team won the Super Bowl. To be honest, we are not football fans–never have, probably never will be. There are some sports that we like, but football is not on the top of our list. Every year for Super Bowl we cook a meal and watch the commercials.
This year we got savvier and utilized our lovely DVR. She allowed us to fast forward through the game and watch only the commercials/half time performance. We pulled out the Chinet and enjoyed each other’s company. Can we say: SWEET!
It’s funny how veggies can inspire a meal. Shermika and I were cleaning out the fridge and found some key ingredients for our Super Bowl commercials party. We decided we would head to the store, pick up two different proteins and then came up with our menu. As you saw, we decided to make empanadas (beef/chicken), spinach dip (FAB), baked potatoes skins, chips, and popcorn clusters . Let’s just say that a belle was in paradise. Everything was divine.
We love our fave spots around town to eat at, but there is nothing like a homemade meal. It makes you feel all warm and fuzzy inside every time. The sis made the chicken filling and I made the beef filling for the empanadas.

Shred chicken add 3 Tbsp of light cream cheese, cilantro, 3-cheese blend (we like Whole Food's brand) lime juice, smokey spices & sauteed onions/garlic.
After braving the lines at the store we picked up a plain rotisserie chicken, removed the skin and used 1/2 of the breast. Check out what we did:

The beef was seasoned with a taco seasoning, has sauteed onions, jalapenos, garlic, & tomatoes. After cooking we put both the chicken & beef in the fridge to firm up.

After piercing with a fork all over, we cooked the potatoes in the microwave for about 7 mins., halved, scooped out some flesh, brushed EVOO on everything, and added a spicy seasoning to the empanadas!
Looks good, huh? Did you enjoy the half time show? Great food? By the way, a belle didn’t enjoy the radio this morning because a lot of peeps have been saying that they weren’t pleased. We loved the half time performance!! I mean, it was what it was. Madonna is 50+ years old and looks great. She lip-synced for her life and did I say she looked fab doing it?
The commercials weren’t that great this year, but there were 5 that we really enjoyed! Treat yourself to a 3 minute or so break and check them here. Go on, you deserve it!

Football is about the only sport I do watch. If you didn't watch the game you missed a great ending. So exciting. Though, I bleed black and yellow (Steelers), I was rooting for my other team NY Giants. And they won. I didn't have any great football food during the game . . . no snacks, no dip, no nothing.
I liked the car commercial and I tried to like the rescued dog commercial but, I thought they were working him too hard . . . poor thing. And my rescued dog does not one thing around my house.

Great post and photos! Looks delicious.
I agree about the rescue dog commercial. If they had shown him some love instead of just working him for their own benefit I might have warmed up to it a little more.
